Spokesman Adam Luck said: "We were shocked and saddened to learn of the death of one of our guests at the hotel on Saturday." James Staughton, managing director, said: "We are devastated at this tragic incident and the death of one of our guests.
"Our thoughts go out to his family and friends and we offer them our sincere condolences on their loss."
He said that the hotel had been given a clean bill of health by the British Safety Council earlier this year.
"As a family-owned business and one of Cornwall's largest companies we take very seriously our responsibilities and the safety of our guests and staff is our top priority."
Any decision on reopening the hotel would be taken in conjunction with the authorities.
The identity of the dead man is expected to be released on Tuesday.
