Thieves used a 4x4 vehicle to drive into the services on the M27 westbound at Rownhams shortly before 01:00 GMT and removed the cash machine. A Land Rover Defender was used to gain entry to the services on the M27 westbound at Rownhams shortly before 01:00 GMT.
The restaurants and toilets are expected to remain closed throughout Tuesday while structural engineers assess damage to the building. Five men, all with their faces covered, were thought to have been involved.
Police said the petrol station between Junctions 3 and 4 remained open. Police said an ATM containing a "substantial quantity of cash" was taken from inside the building.
A dark-coloured Land Rover Defender, along with a white Transit-style van, were seen to drive into the service station before the 4x4 was used to remove the ATM. Both vehicles then left the scene.
Detectives have appealed for information from anyone who was at the services between junctions 3 and 4 at the time or saw the vehicles on the motorway.
