Breakfast of champions: Muhammad Ali's steak and eggs

The morning after he beat George Foreman in 1974, Ali ate two large steaks and 12 eggs, and one he often followed with ice-cream. Unless you're a champion boxer, it's probably not a good idea to follow his lead, but this hearty steak-and-egg hash is definitely hangover-busting. Serves two Boil 300g peeled, diced potatoes in salted water for eight minutes, then drain. Put a splash of oil in a heavy-based pan on a high heat, then sear a seasoned 250g sirloin steak for two minutes a side, remove and set aside, covered. Turn the heat to medium, add a dash of oil and the spuds, and saute until golden. Push the potatoes to one side, add a knob of butter, 80g sliced mushrooms, a sliced shallot and a teaspoon of fresh thyme leaves. Cook until golden, then add a crushed clove of garlic, season and stir into the potatoes. In another pan, fry four eggs. Cut the rare steak into thin strips, add to pan to heat and serve topped with the eggs. |
