• Buying fresh bread can lead to a hefty stash of breadcrumbs from leftover baguette stubs. A ready-to-bake ciabatta is a happy alternative, being a good size for two generous sandwiches. For the filling, try tinned tuna (you can use the whole can – no danger of a fishy fridge) mixed with very finely chopped red onion, roughly chopped capers, a splash of balsamic vinegar, mayo and lots of black pepper. If you want, crumble in some feta too. Divide in half and Tupperware up (separately pack a few taco shells so they don’t crack en route). Cut a ripe avocado in half and wrap in clingfilm.
